Concept – what to expect at Zemya Terroir Cuisine?


Zemya Terroir Cuisine is a special destination for curated experiences, created by Tipchenitza Winery in partnership with Chef Veselin Boykinov. Our philosophy is based on respect for high-quality ingredients, the use of local and seasonal products, and the combination of traditional Bulgarian flavors with modern culinary techniques. For us, food and wine are a form of art. The project is inspired by nature, the richness of the Bulgarian land and culinary traditions. The name “Zemya” symbolizes the connection between people, the land, and its expression through taste.


Zemya Terroir Cuisine offers a complete gastronomic experience, combining author-driven cuisine with carefully selected terroir wines, presented in degustation dinners. The experience begins with a welcome drink and continues with a 6-course menu, where each dish is paired with a selected wine from Tipchenitza Winery.


Two tasting menus are offered at Zemya Terroir Cuisine – one is served on Thursdays and Saturdays, and the other on Fridays and Sundays. In case of allergies or dietary restrictions (including vegetarian preferences), please inform us at least 48 hours in advance. The menus are updated with the astronomical beginning of each season – spring, summer, autumn, and winter.


Reservations – how to make a reservation?


Reservations for Zemya Terroir Cuisine can be made via our website (zemya.tipchenitza.bg) or by email at: zemya@tipchenitza.bg. In both cases, a deposit of €50 per person is required. In case of no-show, the deposit is non-refundable. Changes to the reservation (date or number of guests) are possible up to 48 hours prior to the visit.


Guest Conduct – what do we expect from our guests?


All we expect from our guests is a respectful attitude towards other visitors and the Zemya Terroir Cuisine team. Leave the rest to us – we will take care of every detail of your experience.


Dress Code – what should you wear?


Zemya Terroir Cuisine does not require a strict formal dress code. We recommend dressing in a way that makes you feel comfortable and at ease. We kindly ask you to avoid fully sporty or beachwear attire as a sign of respect towards the experience and the team. Please note that you are visiting a rural location and an active production facility – the terrain may be dusty in places, and high heels may not be the most practical choice. We kindly ask you not to wear strong perfumes.


Start Time – when should you arrive?


The experience begins at 18:00 with a short winery tour. At 19:00, we move to Zemya Terroir Cuisine, where you will be welcomed with a drink, and the tasting starts promptly at 19:30.


In case of delay, you may join the experience at any time, but you may miss part of the menu and wine pairings, which cannot be served later. The full price still applies in case of late arrival.



Children – is it possible to visit with children?


Children are the most wonderful thing in the world and are welcome, provided that you believe they will enjoy the experience and will not disturb other guests. We do not have a separate children’s menu prepared. Up to 48 hours before your visit, you may specify what you would like us to prepare for your child – it could be only a part of the full tasting menu or something different. You will be charged only for what is served. Alcohol is not served to guests under 18 years of age.



Pets – are they allowed?


At Tipchenitza Winery, we love pets and they are welcome on the winery grounds, including during the tour. However, to ensure proper hygiene standards, pets are not allowed in the Zemya Terroir Cuisine dining area. If your pets are comfortable staying alone, they may wait for you in your accommodation during the tasting (if you are staying overnight in Tipchenitsa).


Phone Usage – is it allowed?



We kindly ask you to avoid phone calls during the tasting. If necessary, you may use the foyer outside the dining area. You are welcome to take photos, but we encourage you to focus on the experience and the shared moments.



Smoking – is it allowed?


At Zemya Terroir Cuisine, we aim to provide the best possible tasting experience for food and wine. To preserve the purity of flavors and aromas, smoking is not allowed in the dining area. IQOS devices and vapes may be used in the foyer, while traditional cigarettes, cigars, and cigarillos are allowed only outside the building, in designated areas. There will be two scheduled smoking breaks during the evening. At other times, we kindly ask you not to be absent for extended periods, as this may disrupt the rhythm of the kitchen.


Price – what is included?


The price of €195 per person includes a complete experience – a winery tour, a 6-course tasting dinner with 7 carefully selected wine pairings, overnight accommodation in a double room in the Tipchenitsa area, and breakfast the following morning. Coffee and tea after the tasting are complimentary. Additional wines or digestifs may be ordered at an extra charge.


Beverages – are there non-alcoholic options?


As expected, the tastings focus on the boutique wines of Tipchenitza Winery, although on certain days they may include other regional wines. We also offer a non-alcoholic pairing option, in which case €20 will be deducted from the price. Please inform us at least 24 hours in advance. All non-alcoholic beverages are created by Chef Veselin Boykinov and are not standard commercial products.


Overnight Stay – is accommodation available?


For guests wishing to stay overnight in Tipchenitsa, we arrange accommodation near the winery. We currently offer 5 double rooms (up to 10 guests), with the option to add a child’s bed if needed. Single occupancy (upon request or for odd-numbered bookings) is subject to an additional charge of €30 per person. If you choose not to use the accommodation and breakfast, €50 will be deducted from the price.


Breakfast – what to expect?



Guests staying overnight are offered a traditional Bulgarian breakfast, included in the price. It is specially prepared and presented by Chef Veselin Boykinov and is served between 8:00 and 10:00.


Accessibility – is access available for guests with disabilities?


Zemya Terroir Cuisine is designed to accommodate guests with disabilities, including an accessible restroom. Unfortunately, the accommodation facilities nearby are not accessible.


Opening Hours – when is Zemya Terroir Cuisine working?


Zemya Terroir Cuisine operates from Thursday to Sunday, from 19:00 to 23:30. Breakfast for overnight guests is served between 08:00 and 10:00. Outside of operating hours, guests are welcome to use the shared spaces of Tipchenitza Winery.


Parking – are there options?



Tipchenitza Winery provides ample parking, including space for larger vehicles such as caravans, minibuses, and buses.
